NDUJA – THE WONDER INGREDIENT
A unique product from the southern most region of Italy, Calabria. ‘Nduja is a favourite in its homeland and used widely in Calabrian cooking. It is being picked up amongst chefs across the world and paraded as the “Greatest Italian food discovery since mozzarella”
Something of a fugitive food, though one that is captive at last. The chilli-spiced, spreadable pork sausage is a palate-invading, sensory delight with a unique taste, making it suitable for a variety of dishes, it’s a wonderful ingredient for many recipes. Sev, my brother, and I were served it simply fried with a drop of extra virgin olive oil and then an egg was broken over it. Once the egg was cooked, it was placed over a rustic slice of Altamira bread for us to enjoy with a small glass of home made red wine – I could see from Sev’s smile that it was a must for the menu back at Glumangate. It may look like a common or garden sausage but ‘Nduja. The fiery pork paste from Calabria is about to tantilise taste buds across the world.
